Apple Cinnamon Bread

With the heat of summer is behind us, it’s time to welcome our festive favorites! Rivaled only by pumpkin and cranberries, apples are the quintessential flavor of fall.

As crisp as the cool air, nothing compares to the satisfying crunch of biting into a tart apple. Plucked from a tree branch or snagged from the produce aisle, choose your favorite apple to dice up for the perfect Apple Cinnamon Bread.

In a hunk of Apple Cinnamon Bread, chunks of apple await like juicy little gems. Vanilla, nutmeg, brown sugar, and cinnamon harmonize together in a swirl of warm sweetness, a serenade that only a spoonful of silky glaze could amplify.

Key Ingredients

  • Oil: As neutral-tasting as possible. We recommend canola oil.
  • Apple: One apple of your choice cut at a medium dice (½ inch cubes).
  • Light brown sugar: The light part is key! “Light” means less molasses, preventing our bread from getting too dark.
  • Vanilla extract: No more no less (vanilla extract packs a potently strong punch).
  • Salt: Juuuuust a tad.
  • Glaze: Optional, but too easy and too delicious to pass up.

How To Make Apple Cinnamon Bread

  1. Preheat the oven to 350°F, and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
  3. Using a stand mixer fitted with a paddle attachment or a mixing bowl, beat together the sugar and oil. Add the eggs and vanilla.
  4. With the mixer on low speed, alternate adding the flour mixture and milk, mixing between each addition. Stop mixing as soon the dry streaks disappear. Don’t over mix!
  5. In a small bowl, toss together the diced apples, brown sugar, and cinnamon.
  6. Scoop half the batter into the prepared loaf pan, then half the diced apple mixture. Spoon the remaining batter over the apples, then sprinkle the last of the apple mixture on the top of the batter.
  7. Use a knife to swirl the batter, so the apples are better mixed. Bake for 45-55 minutes, until a skewer or knife inserted in the center comes out clean. The internal temperature should reach 205-210°F as sensed by an instant-read thermometer.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack. Cool completely before slicing.
  9. While the bread cools, make the glaze by combining powdered sugar and milk in a bowl. Add additional milk to reach the desired consistency. Ladle the glaze over the cooled bread.

Tips and Variations

  • Try swapping out the apple in this recipe for a Bartlett pear.
  • Beware: overmixing your batter will yield a more brick-like than bread-like result.
  • Add in a smidge of fresh grated ginger for a floral spin.
  • Slice the bread with a serrated knife for cleaner, less crumbly cuts.
  • Allow the bread to completely cool before slicing! Cut too soon, and you’ll interrupt the baking that continues inside after removal from the oven.

Storage and Reheating

Countertop: Store your Apple Cinnamon Bread in a brown paper bag for up to 3 days.

Refrigerator: This bread can be kept in an airtight container in the refrigerator for 4-5 days. Refrigerator can cause the stop to gather moisture and feel sticky to the touch.

Freezer: Cinnamon apple bread holds up well to freezing. Wrap the entire cooled loaf of bread in plastic wrap followed by aluminum foil. Store individual slices the same way. The bread will stay fresh in the freezer for about 2 months. Thaw in the refrigerator before serving.

Reheating: Enjoy at room temperature or microwave for 10-15 seconds.
