S’mores Popcorn Mix
This s’mores popcorn mix has all the gooey marshmallow and melted chocolate flavor of a campfire treat, minus the fire. It comes together in under an hour with popcorn, Golden Grahams cereal, marshmallows, and plenty of chocolate.

We love s’mores, but we don’t always want to build a fire to make them. This popcorn mix has the same chocolate and marshmallow combination in a salty, sweet, crunchy snack.
It works well for movie nights, parties, and summer get-togethers. We also like setting out a build-your-own s’mores board so everyone can make their own, but this mix is the easier, less messy option.
Pick Out the Unpopped Kernels First
Line a large baking sheet with parchment paper or wax paper so the chocolate doesn’t stick.
Before adding anything else, run your fingers through the popcorn and remove any unpopped kernels. They are much harder to spot after the cereal and marshmallows are mixed in.
Lightly salted popcorn works best because the salt balances the chocolate and marshmallows and keeps the mix from tasting overly sweet.
Add the Golden Grahams and mini marshmallows, then gently toss everything together with your hands. I like to mix it right on the baking sheet so there are fewer bowls to wash. Just go easy since popcorn breaks apart quickly.

Melt the Chocolate in Short Bursts
Place the milk chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring well after each one, until the chocolate is smooth.
Chocolate can burn quickly, even when it still looks like it needs more time. Stirring between each interval helps the remaining chips melt without overheating the chocolate.
The coconut oil or shortening is optional, but it keeps the chocolate loose enough to drizzle evenly instead of falling onto the popcorn in thick clumps.

Chill Until the Chocolate Sets
Sprinkle the mini chocolate chips over the mixture, then drizzle the melted chocolate across the top.
To help the mini chips hold their shape, let the melted chocolate cool slightly before sprinkling them over the popcorn. Otherwise, they may melt into the drizzle.
Refrigerate or freeze the mixture for 10 to 15 minutes, just until the chocolate is firm enough to hold everything together.
Break the s’mores popcorn mix into pieces and transfer it to a large bowl. For a summer party, serve it alongside our 4th of July snack mix.
