Cinnamon Apple Bread
In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
Mix together the sugar and oil then, add the eggs and vanilla.
Alternate adding the flour mixture and milk, mixing between each addition.
In a small bowl, toss together the diced apples, brown sugar, and cinnamon.
Scoop half the batter into the prepared loaf pan followed by the half the diced apple mixture.
Spoon the remaining batter over the apples, and place the last of the apple mixture on the top of the batter.
Use a knife to swirl the batter, so the apples are better mixed.
Bake at 350°F for 45 to 55 minutes or until a knife inserted in the center comes out clean.
Serve with a sweet glaze or enjoy plain.
