Tear 4 large pieces of foil, and place several pieces of sausage into one of the pieces.
Add the potatoes, carrots, and onions.
Sprinkle the vegetables with 1/4 of the Ranch seasoning.
Drizzle with 1 tablespoon of olive oil, and add a thyme sprig.
Form the foil into a pouch, and add the white wine or chicken broth. Fold the pouch closed and seal tightly.
Repeat with the remaining sausage, vegetables, and seasonings.
Grill with the lid closed for 10 minutes, flip, and grill for 8 to 10 additional minutes.
Open carefully. There will be a lot of steam! Serve immediately.
