Can I make the parts ahead of time?

Yes, and I recommend it. Bake and freeze the cookies one day, then freeze the ice cream layer and assemble the next. Breaking it up makes the recipe feel a lot less long.

Why did my ice cream melt while I was assembling?

It probably sat out too long or your house was too warm. Keep the ice cream rounds in the freezer and pull them out one at a time as you build each sandwich.

Can I use a different cookie cutter size?

Sure. Just use the same cutter for the cookies and the ice cream so everything lines up. Smaller cutters will give you more sandwiches, and they'll need a minute or two less in the oven.
