Fresh Apple Cake
In a large bowl, whisk together the sugar, oil, and eggs.
Use a sturdy spoon or spatula to stir in the flour, vanilla, baking soda, salt, and cinnamon.
Fold in the diced apples. The batter will have a paste-like consistency.
Press the batter into a prepared baking pan.
Bake at 350°F for 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
