When St. Patrick’s Day rolls around, I like to have at least one fun snack mix ready to go.
This leprechaun bait recipe is a no-bake, sweet-and-salty snack mix made with simple pantry ingredients and a quick vanilla candy coating.
It works for everything from school parties and movie nights to St. Patrick’s Day dessert boards.

Key ingredients
- Popcorn: Plain, lightly salted popcorn works best.
- Cereal: Rice Chex and Cheerios are what I like to use. You can swap some (or all) of the cereal for Lucky Charms to keep the “leprechaun bait” theme.
- Mini pretzels: Mini twists or itty bitty minis both work.
- Marshmallows: If you can’t find the Lucky Charms brand, any small dehydrated marshmallows are fine.
- M&Ms: Try to use green or a green and gold mix for true St. Patrick’s Day colors.
- Vanilla melting wafers.
- Festive sprinkles.
How to make leprechaun bait

- In a large mixing bowl, combine the popcorn, Rice Chex, Cheerios, mini pretzels, and half of the marshmallows and M&Ms.

- Pour the melted vanilla coating over the cereal mixture.

- Gently toss until everything is evenly coated, being careful not to crush the popcorn or cereal.

- Transfer the coated mix to the prepared baking sheet and spread it into an even layer. Sprinkle on the remaining marshmallows, M&Ms, and sprinkles. Once it sets, break into clusters.
Tips for the best leprechaun bait
- Don’t overheat the coating: If the vanilla melting wafers or white chocolate get too hot, they can seize and turn thick or grainy. Short bursts in the microwave with lots of stirring will keep the coating smooth.
- Work quickly once the coating is on: As soon as the melted wafers hit the mix, toss and spread it onto the baking sheet right away. Add the marshmallows, M&Ms, and sprinkles while the coating is still wet so everything sticks.

What can I use if I can’t find Lucky Charms-style marshmallows?
Any small dehydrated marshmallows will work, and many stores sell them in baking or hot cocoa sections.
You can also pick the marshmallows out of a box of Lucky Charms cereal if you don’t mind the extra step.
What if I don’t have vanilla melting wafers?
You can swap in white candy melts, almond bark, or white chocolate chips.
If using chocolate chips, add about ½ teaspoon of coconut oil or vegetable shortening to help them melt smoothly and set more easily.
Storage
Store leftovers in an airtight container at room temperature for up to 5–7 days.

- Let the snack mix set until firm (about 20-30 minutes). Once hardened, break into clusters and enjoy!

- Store leftovers in an airtight container at room temperature for up to 5–7 days.
Notes
- This recipe makes about 8–10 servings, depending on portion size. A typical serving is around ½ to ¾ cup of snack mix.
- Normally, I’d use Lucky Charms Magical Marshmallows for this recipe, but I couldn’t find them anywhere. If you run into the same issue, small dehydrated marshmallows are a great substitute, or you can pick the marshmallows out of a box of Lucky Charms cereal.
- Feel free to substitute any of the cereal with the same amount of Lucky Charms cereal.
- Vanilla melting wafers are Ghirardelli White Melting Wafers. I love those for the ease of use and flavor.
- To help the melting wafers “set” faster, pop the snack mix into the fridge for a few minutes.
- If your store carries Itty Bitty Mini Pretzels, those are the ones I’d use. Their size is perfect for this mix. If not, mini pretzel twists will also work.
