Light and airy, yet dense enough to hold up to any hamburger or sandwich. Homemade brioche rolls are easy to make and better than store-bought.

- 1 cup water
- 3 Tablespoons milk
- 2 1/4 teaspoons yeast
- 2 Tablespoons sugar
- 3 cups bread flour
- 1/3 - 1/2 cup All-Purpose flour
- 2 Large Eggs (1 reserved)
- 1 1/2 teaspoons salt
- 3 Tablespoons unsalted butter cubed (softened)
Heat water and milk in the microwave to 110-115 degrees. Add yeast and 1 Tablespoon of sugar.
Allow yeast mixture to sit until frothy. Usually, this takes about 5 to 10 minutes.
While waiting for yeast, mix flours, sugar, salt, and butter in the stand mixer using the paddle attachment. The mixture should resemble coarse cornmeal when finished.
Add one of the eggs and yeast mixture to the flour.
Change to the dough hook and knead on low speed for 6 to 8 minutes.
The dough should be smooth and not too sticky. Add additional flour if needed.
Remove the dough from mixing bowl and place in a separate greased bowl. Cover with a clean towel or plastic wrap.
Allow to double in size. This usually takes about an hour.
Once the dough has risen, remove it from the bowl and press it down to remove the air.
Cut the dough into 8 equal pieces.
Roll each piece into a ball and tuck loose ends underneath. Place each ball (bun) onto a baking sheet lined with parchment paper or silicone baking sheet.
Cover buns with a clean towel again and allow to rise a second time.
In the meantime, place an oven-safe bowl of water in an oven preheated to 400 degrees. There should be enough water to create steam.
Make an egg wash by mixing the remaining egg and 1 to 2 Tablespoons of water.
After the buns have risen a second time, use a pastry brush to apply the egg wash to each bun.
Place the buns in the oven and bake for 12 to 15 minutes or until golden brown.
